Our Cooking for Special Diets course teaches you the essential principles and guidelines for maintaining a healthy diet that are suitable to use when cooking for those with special dietary requirements. Learn to use alternative ingredients, nutrition guidelines and a variety of cooking techniques to create tasty dishes for those who follow heart-healthy, gluten-free and low-glycemic diets. Practice such recipes as beet and cashew dip, grilled flank steak, lettuce wraps with lentil tabbouleh, quinoa pizza, gluten-free spiral vegetable tart, pistachio-crusted salmon, creole shrimps and more.

You must bring your full George Brown chef uniform, black safety shoes (non-slip and steel toe) and tools to the first class.

Prerequisites

You must have completed our HOSF 9445 Healthy Culinary Arts course or our HOSF 9476 Healthy Culinary Arts (Online) course or our HOSF 9088 Culinary Arts 1 course or our HOSF 9473 Culinary Arts 1 (Online) course. (An approved equivalent is also acceptable.)
